Okroshka (cold summer soup)

Okroshka
[oh-kro-sh-ka]
(cold summer soup)

Let's start off with one of my absolutely favorite things to eat, ever. At first, the ingredients may make you think "What the hell is wrong with this chick?!" but once you actually try it, you'll be thanking me.

Ingredients :

  • 2 pkgs hotdogs
  • 10 eggs. Boiled
  • 4 large potatoes. Boiled
  • 4-6 cucumbers
  • 1 bunch of spring onion
  • 1/2 bunch of parsley
  • 1 quart buttermilk
  • 2 bottles seltzer water
  • 10 radishes (optional)

Steps :

1. Cut up the hotdogs, eggs, potatoes and cucumbers into small squares. Put into pot.
2. Cut spring onion and parsley and add to mix.
3. Add buttermilk to cut up ingredients.
4. Add seltzer water.
5. Toss/mix
6. Optional : use a grater to grate radishes into the mixture.
7. Serve cold.

This dish is very easy to make and is very tasteful. You can also substitute cooked chicken for the hotdogs if you'd like or really any type of cold cut would do as well. ***ahem***bologna***ahem***
